Pandan Basque Burnt Cheesecake

Since we're still in the midst of the circuit breaker and we are all trying to be circuit bakers, here's an easy to follow recipe that all of you can try at home (if I can do it, you definitely can too!)


Ingredients needed:

-3tbs of blended pandan leaves and 2tbs of pandan paste (this can be adjusted to suit your preference really)

-4 eggs

-500g cream cheese

-150g caster sugar

-130g whipping cream

-150g coconut cream

-25g all purpose flour


Step 0: Before you start, preheat your oven to 200 degrees for 20 minutes or until you complete the cake mixture


Step 1: In a blender, blend a packet of pandan leaves with half a cup of water.

Strain the mixture to filter out the pandan juice.


Step 2: In a large bowl, beat the cream cheese until it become fluffy.


Step 3: Add eggs into the bowl 1 at a time, mixing after each addition.


Step 4: Add sugar and mix well.


Step 5: Add whipping cream and mix well.


Step 6: Add coconut cream and mix well.


Step 7: Sprinkle the flour using a sieve and mix well.


Step 8: Add 3tbs of the pandan extract that was blended and 2tbs of pandan paste (for a stronger flavour) and mix well.


Step 9: Pour the cake batter into a lined mould (I used an 8 inch tin for this).


Step 10: Remove air bubbles by tapping the tin on a tabletop a few times.


Step 11: Bake for 1 hour (do not open the oven while doing so!!!).


Step 12: Remove the cake from the oven, let it cool down.


Step 13: Put cake in the fridge for at least 5 hours of overnight.


Step 14: Enjoy your cake and post a picture on instagram ;)
